Danielle Olcott

Event Coordinator

Originally from New Jersey, Event Coordinator & Media Facilitator Danielle Olcott has made Chapel Hill her home since she first arrived in the fall of 2007 as a freshman at UNC. She first began working at Top of the Hill as a hostess in 2009 and now, with a degree in Interpersonal Communication in hand, Danielle orchestrates all social media and marketing presence for Top of the Hill, while also coordinating weddings and other social events in The Great Room.

Katherine Hollander

Event Coordinator

A Tar Heel born and bred, Katherine Hollander is a second generation Carolina Alumnus, graduating in 2008. After receiving her degree, she cultivated her experience in the hospitality industry by way of Disney World in Orlando, Florida and events with an PR agency in Chicago, Illinois. After her return back to the South, she gained years of experience with event coordinating and is now the newest member of The Great Room event team.

Rebecca Seawell

Event Coordinator

Growing up in a military family, Rebecca learned at an early age how to adapt quickly to changes. A graduate of UNC-Chapel Hill, she now uses this skill to help coordinate weddings and other social events in The Great Room as well as manage the social media and marketing presence of Top of the Hill.

Trey Cleveland

Executive Chef

Trey is a New Orleans native and moved to North Carolina in 1989 after graduating from The Culinary Institute of America in New York state. Trey joined Top of the Hill in 2000. His influence and culinary insight can be seen in every aspect of operations, from the main restaurant and two bars to the event complex. He was an integral part of planning and designing The Great Room and still plays an active role in the execution of events. His goal is to always exceed his guests expectations.

Matt Butler

Banquet Chef

A native of upstate New York, Head Catering Chef Matthew Butler found he couldn’t stay out of the kitchen after what was supposed to be a short stint at a restaurant upon graduating from college. Matt has opened restaurants for Nancy Lopez and Arnold Palmer in The Villages of Florida and moved on to open and operate multiple Triangle eateries before joining the Great Room Team in the fall of 2010. Matt and his culinary staff work hard to tailor each menu around the individuality of the client, embracing the challenge of creating dishes and memories that last a lifetime.

George Dusek

Brewmaster

George got his start home-brewing as a hobby and eventually quit his day job to pursue his passion full time. After completing the Official Craft Brewing Program at the Seibille Institute of Technology in Chicago, George set his sights on the south and papered every brewery from Illinois to North Carolina with his resume on a road trip in 1997. Less than a week after returning home from that fateful trip George was invited to join the Topo team and he’s been with us ever since. Visit the new distillery and you’re likely to catch George cruising around on his newest toy, the company forklift.

Aaron Caracci

Brewer

Aaron, like George, was also a home brewer before he was first invited to train with John back in 2009. For Aaron, overseeing the successful “grain-to-glass” brewing process here at Top of the Hill is simultaneously intriguing and gratifying. Come up to see us at Top of the Hill and you’re likely to find Aaron either in the brewery, hard at work making fantastic beer, or at the bar, hard at work winning the Top of the Hill fantasy football league. The Iron Mine Pale Ale is his beer of choice.

Chris Atkins

Brewer

Chris, the newest edition to the brewing team, is a born and bred Durham-ite. A UNC Greensboro graduate, Chris went on to complete the Brewing Science & Technology Program at the World Brewing Academy and graduated from the Doemens Academy in Munich, Germany. Chris interned at the Lonerider Brewery in Raleigh before joining the Top of the Hill team and claims that the IPA is his favorite Topo beer so far.
